One of my favorite things is a hot,crispy, breaded,chicken paillard topped off with a cool salad of baby arugula, fresh mozzarella, red onion, tomato,and shaved grana padano mixed with a simple vinaigrette made with olive oil and balsamic or sherry vinegar and a little salt and pepper. No recipe really...we also had some roasted red potatoes with rosemary and garlic...there was a glass of wine which you can not see and that was that.
It was a long day and a late dinner....
The chicken breast was pounded thin and dusted with flour, dredged in egg beaten with a little water and dipped in a mixture of Panko crumbs, seasoned bread crumbs and grated parmesan cheese. Then lightly shallow fried in a little bit of olive and canola oil mixed. A bag of baby arugula and the other things mentioned were put together and a simple vinaigrette mixed right in the bowl...the crispy chicken and the cool salad is a wonderful mixture on the tongue...it reminds me of Italy where I first ate this...
We shared an orange for dessert...and now to bed...
